This Lake Como Cake, or Miascia as it is traditionally called, is based on an Italian traditional dessert that makes great use of leftover bread.

With this recipe, we combined brown sugar, white sugar, eggs, amaretto cookies, stale bread, vanilla extract and zests, and soaked it all in cream overnight, then baked and topped with homemade Italian candied fruit known as “mostarda di frutta”.

This dessert may have originated as a “poor man’s dessert” but clearly even stale bread can be turned into something as beautiful as it is delicious.
