In our version of chicken chow mein, the vegetables match the meat and noodles in quantity, which makes every bite burst with freshness. (Bonus, because we’re using rotisserie chicken – it comes together in no time!) And then the whole dish is enveloped in a rich hoisin sauce that’s loaded with a copious amount of ginger to really round out the party of chicken, noodles, and vegetables.

Thoughts: Thoughts: We went crazy using bell pepper, snow peas, bok choy, and scallions for our vegetables of choice. But, you could also add mushrooms, kale, Swiss chard, arugula, celery, carrots, broccoli, or even a couple of hot peppers. This is a serious “clean out the crisper” type of meal, so go to town with what you’ve got on hand.

Other Thoughts: We’re calling this a “weeknight meal,” but it would be great for entertaining. Just serve it with some chilled libations and call it a party!
