We, however, like to call it a “purple bite of joyfulness.”

Because, who doesn’t feel like they’ve had a purple bite of joyfulness when they taste the earthy, smoky, meaty, nibble of eggplant?

Hence, our very literal nickname for this luscious nightshade.

But, what if we took this wonderful little ingredient and made it into something completely different? What if we turned on a magic machine, waved our wand, and turned this little bite of deliciousness into a crispy, crunchy, herby, cheesy, addictive little snack?
