Eat Your Veggies With This Deliciously Easy and Healthy Egg Roll in a Bowl Recipe

First, we’re going to address the elephant in the room. 

Egg rolls don’t typically have bell peppers in them. There. We said it. 

However, wouldn’t the world be super duper better if egg rolls did have cabbage, carrots, pork, bell peppers, scallions and some spicy sambal oelek for a mix of Chinese, Japanese, Indonesian and other Asian flavors? 

That’s what we’re talking about – all of the good things in one bowl. 

And of course, we’re not just throwing all of the delightful veggies and meat in a bowl, we’re topping it with a crazy savory mix of ginger, tamari, mirin and sesame oil. 

Yes, the aroma is intoxicating. And then the whole thing comes together on a bed of crisp Napa cabbage all topped with cilantro and scallions. 

Bonus: The meat mixture freezes like a dream, so all you need to do is grab it out of the freezer and microwave it for a couple of minutes to make it come back to delightful life. Plus, you can serve this with cooked white rice, brown rice, rice noodles – whatever your heart desires. 

Note: Some people use “coleslaw mix” for this type of recipe. But, because we’re a knife company, we like to get into our vegetables and play.
