Get a Taste of the Mediterranean “Diet” With This Greek Recipe for Spanakopita Cups

When you're reaching for the ultimate game day snack, what sounds better than spicy sauteed spinach enveloped by herby, creamy ricotta and salty, briny feta with the kiss of fresh dill to bring it all home? Answer, not much.

Oh, and did we mention that it’s served in super flaky puff pastry cups?

Not only are these hands on appetizers incredibly delicious, they also come together in just a few minutes.

And by “just a few minutes,” we mean literally as long as it takes for you to sauté spinach, stir it into a bunch of delectable cheese, then spoon it into the cups.

Not meaning to sound like we promote debauchery or anything, but you could even pull this together after having a couple of cocktails! (Maybe just get your knife work out of the way ahead of time.)

So, grab some greens, some cheese, some puff pastry, a cutting board and, of course, one of your favorite F.N. Sharp knives – we went for the utility knife for this one! – and let’s get this delicious appetizer in the pipeline!

Note: The filling and shells can be made up to 2 days ahead of time and stored separately. When ready to assemble, simply divide the mixture between cups and bake for 20-25 minutes.
