Do you love pears? Do you love cheese, and a good amount of it? Well, well, well, friends, do we have a savory galette recipe for you! Sharp cheddar cheese is incorporated into a flaky butter crust, and then it’s topped with pears, onions, and thyme. Oh, and just to make it over-the-top delicious, it’s topped with blue cheese crumbles.

Holy wowza, Batman!

This is a wonderful appetizer before a celebratory meal, or just as a weekend treat with a crisp glass of sumpin’ sumpin’.

It’s perfect when served hot or at room temperature, so you’ve got options.

And we’re nuts for a good, aged sharp cheddar with a bright and sprightly blue cheese, but you could also trade the cheddar for gruyere in the crust, or top it with brie just before it finishes baking.

Again, you’ve got options.

So, grab your favorite F.N. Sharp Damascus Steel Utility Knife, get that cutting board ready, and grab those pears! You’ve got some insanely delicious food to make.

Thoughts: Go ahead and make the dough a day ahead of time if you’re so inclined.

Other thoughts: You could swap out the yellow onions for shallots, because – you know – shallots are delicious too.
