Eat Your Veggies With This Splendiferous Veggie Soup

Sure, a new year is just about here and we all want to eat “clean” to start it off right. But, that feels a little weirdly punitive doesn’t it? We “have to eat better to be healthy.”

That doesn’t sound like much fun. And come on. It’s a new year, so let’s have some fun!

What if we rephrase the affirmation to “eat beautifully to be happy”? Well, that sounds pretty righteous, and we’re on board with that. And the best thing about heading into 2021 is that we’ve never had more beautiful veggies to play with. Back in the day, spinach meant “the boxed stuff,” and now it means “locally grown hydroponic baby spinach with loads of color and flavor.”

Purple potatoes aren’t an oddity anymore, and let’s face it – has our cabbage ever been more brilliantly hued? Which leads us to the humble veggie soup. It’s not so humble anymore, in fact it preens a little bit. Because it’s beautiful. One could even call it – splendiferous.

But don’t let this soup distract you with its startling good looks. It’s kissed with ginger and loaded with herbaceous flavor too.
