Turn Your Strawberry Rhubarb Pie Into Cute Little Hand Pies With This Recipe

Recipe and photos by Launie Kettler

Sweet, lightly tart, slightly lemony, with a little kiss of saltiness, these sunny fruit hand pies are the perfect dessert or snack in the summer!

When rhubarb plants grow, they grow with enthusiasm! And that’s why in June and early July, you can find fresh rhubarb everywhere. From your own garden, to the farmers market, to the grocery store. It’s rhubarb season, folks!

And what a treat it is.

Rhubarb makes your mouth come alive with “pucker power,” as my grandfather used to say. So, the sweet strawberries make the two of them the ultimate marriage of deliciousness. One might even go so far as to call them the perfect Yin/Yang of flavor.

And these treats come together in no time at all for the perfect midweek treat. Slice some rhubarb, cook it with sugar, add in some strawberries, lemon and cinnamon, and wrap it in some pastry.

No muss, very little fuss, and a big, big payoff.

So, grab your F.N. Sharp Damascus Steel Utility Knife and a handful of rhubarb stalks, and get that cutting board ready – you’ve got some summer magic to make.
