Top o' the morning to ya! ☘️

If you want to get your Irish on, grab some potatoes, cabbage, scallions, and sharp cheddar cheese. Because ‘tis time for some mashed potatoes that will make your heart soar and your feet Riverdance in joy! 

Traditionally, colcannon is made with cabbage or greens sauteed in butter. Which is plenty delicious. However, we thought we could give the dish a little extra pizazz.

So, we went right to the source and asked the potatoes some probing questions. And then we listened to the potatoes.

“Hey, Potatoes. How are you today?”

“Good, good.”

“It’s nearly spring, how great is that?”

“It’s pretty great. I’m a little tired of winter cuisine.”

“I know, right?”

“Even though I like to be stored in a cool, dark place, I say, ‘Bring on the sunshine, warm nights, and cold beer!’”

“I agree one hundred percent! So, here’s a personal question. Who do you like to hang out with?”

“Well, I really love bacon, scallions, and cheddar. When we all get together, it seems like the world is a slightly better place. Ya dig?”

“Oh, we dig it!”

So, we cooked off some bacon, reached for some good Irish cheddar, and thinly sliced some scallions.

You gotta give the potatoes what they want!
